Diver Sea Scallops   $21.95

Ingredients:

  • 10 jumbo sea scallops
  • 2 tablespoons of olive oil
  • (or enough to lightly coat the bottom of the pan you are using)
  • Kosher salt and pepper
  • 1 tablespoon of butter

Instructions:

  1. Place scallops between two paper towels and gently pat dry. (Note: It is very important that they are dry so they don’t steam when you cook them.) Season both sides with salt and pepper.
  2. In a skillet large enough to fit all of the scallops without over crowding them, heat oil over medium-high heat. Once the oil is hot, lay the scallops in gently. Cook 4 minutes per side. (Note: Non-stick pans aren’t the best for this, I used a cast iron skillet. You may notice the scallops sticking, just be very gentle with them they will pull up).
  3. Once your scallops are cooked, reduce the heat to medium, add the butter to the skillet. As it melts spoon it over the scallops. Remove the scallops to a platter.

Ahi $14.95 

Prep time: 1 hr 05 min   Seared Ahi

Cook time: 05 min

Ingredients:

  • 2 tablespoons soy sauce
  • 2 tablespoons Aji-mirin wine (sweet cooking rice wine)
  • 1/2 teaspoon ground ginger
  • 1 clove garlic, minced
  • 1 teaspoon sesame oil
  • 2 ahí tuna steaks
  • 2 tablespoons olive oil
  • 1/4 cup sour cream
  • 1 teaspoon wasabi paste
  • 1 teaspoon rice vinegar

Instructions:

  1. In a bowl combine soy sauce, mirin, ginger, garlic and sesame oil. Mix well. Place ahi steaks in the marinade and turn to coat. Cover and marinate for 1 hour.
  2. Mix together sour cream, wasabi and vinegar. Cover and refrigerate until ready to use.
  3. Heat olive oil in a large heavy bottomed skillet over medium-high heat. Cook tuna 2 – 3 minutes per side.
  4. Slice thinly and spoon wasabi cream sauce over the top. Serve.

Mahi Mahi   $12.95

Ingredients

◦ 2 medium tomatoes, chopped

Mahi Mahi

◦ 2 tablespoons lime juice

◦ 2 tablespoons olive oil

◦ 1 tablespoon fresh parsley, chopped

 

◦ 1 garlic clove, minced

◦ 1/4 teaspoon hot sauce

◦ 1 1/2 lbs mahi mahi steaks, about 1/4 in. thick

Directions

1 Combine tomatoes, lime juice, 1 Tbsp olive oil, parsley, garlic,

and hot sauce in a small bowl and refrigerate for 2-12 hours.

2 Preheat the grill to medium. Rinse fish then pat dry.

Cut into serving size pieces if necessary.

3 Brush fish with remaining 1 Tbsp of olive oil.

4 Grill fish 7-9 minutes or until fish flakes with a fork.

5 Top with tomato mixture and serve.

 

 

Opah $14.95 

Ingredients

◦ 1/2 a lemonOpah

◦ extra virgin olive oil

◦ 1 lb fish, opah

◦ salt and pepper

Directions

1 Squeeze lemon all over both sides of fish. Salt and pepper both sides of fish.

Heat olive oil in frying pan. Sear fish over high heat for about 3-4 minutes per side. Serve.

 

 

 

Sea Bass $16.95 

IngredientsSea Bass

◦ 1 lb sea bass ( cleaned and scaled)

◦ 3 garlic cloves, minced or crushed

◦ 1 tablespoon extra virgin olive oil

◦ 1 tablespoon italian seasoning or 1 tablespoon fresh parsley leaves

◦ 2 teaspoons fresh coarse ground black pepper

◦ 1 teaspoon salt

◦ 2 lemon wedges

◦ 1/3 cup white wine vinegar (optional) or 1/3 cup white wine (optional)

Directions

1 Preheat oven to 450F°.

2 In a cup, mix garlic, olive oil, salt, and black pepper.

3 Place fish in a shallow glass or ceramic baking dish.

4 Rub fish with oil mixture.

5 (Optional) Pour wine over fish.

6 Bake fish, uncovered, for 15 minutes; then sprinkle with parsley or Italian seasoning and continue to bake for 5 more minutes (or until the thickest part of the fish flakes easily).

7 Drizzle remaining pan juices over fish and garnish with lemon wedges.

8 Enjoy!

Fresh Diver Scallops

sea_scallops_Add the butter and oil to a 12 to 14-inch saute pan on high heat. Salt and pepper the scallops. Once the fat begins to smoke, gently add the scallops, making sure they are not touching each other. Sear the scallops for 1 1/2 minutes on each side. The scallops should have a 1/4-inch golden crust on each side while still being translucent in the center. Serve immediately.

Fresh Alaskan Halibut

 In a baking dish, marinate the halibut with the olive oil, lemon pepper and lemon juice. Marinate for a couple of hours in the refrigerator. Use alderwood in grill (if available) for smoky Alaskan flavor. Place fish on hot barbecue grill and cook approximately 5 minutes per side (depending on thickness.)

In a saute pan either on stove or grill place butter, cilantro and lemon juice. Cook until melted. Place fish on decorative plates and cover with sauce. Garnish with sprig of cilantro.
